We’re decidedly in the holiday season now here at Chez Recessionista. The Christmas tree is standing proudly in the living room (as usual, we opted for a Charlie Brown-style in terms of girth and stature, but we love it anyway), the house is decorated with holiday bling, and the weather is now decidedly wintry. A perfect night for a quiche!
I’ve been tweaking several quiche recipes that I’ve used over time, and I’m so very pleased with the results of my concoction. In a medium bowl, I whisk six eggs and add a cup or so of almond milk once the eggs are blended, whisking again to combine everything. Then I set out two pie crusts and line the bottom with – ready? – a can of diced tomatoes, drained and divided between the crusts. Top the tomatoes with some dried basil and onion powder, then some salt and pepper, and then pour the egg mixture evenly on each crust. (I’m sure you could add some cheese – and I’ve certainly added in other ingredients, such as bell peppers, from time to time!)
Then, just put the quiches in the oven at 350 for 45-50 minutes (if your oven cooks faster, start checking around 35 minutes – mine is a slowpoke, so it takes the full 50). Once they’re set, they’re done!
But we cannot live on quiche alone, so as they finished baking I whipped together a quick salad – butter lettuce, cherry tomatoes, olives, some Snapea Crisps and some leftover cheddar cheese from a weekend meal. Put together, it makes a wonderfully well-rounded meal!
And a wonderfully tasty one, too, if I do say so myself. :) There’s just something about quiche that is so comforting and homey. And furthermore, it brings up another great memory for me – which, I confess, is a reason I baked these two tonight (we’ll freeze the second pie for later). A couple of years ago, I made a variation of this quiche recipe on the night of one of the biggest snowstorms our area had ever seen, and paired it with a lovely French wine from our dear European neighbors next door. Ever since, I’ve equated this tomato quiche with snowstorms and winter. I suppose that down deep I’m always hoping for a snow day, even when we don’t have a – forgive me – snowball’s chance of one in the near future!
