In keeping with the Cuban theme from last night, tonight we served one of LeeLee’s specialties — Cuban sandwiches! Rice was served alongside the Cubans, but it really wasn’t necessary; with three kinds of “meat,” not to mention cheese and pickles and mustard, these sandwiches are a meal in themselves!
Another great thing about this dish is the copious amount of leftovers it makes. I for one am looking VERY forward to dining on these for the rest of the week!

Beautiful photo! What a tasty sandwich! However, the rice lover in me recoils at the ready rice. Get thee an old fashioned and super cheap rice cooker (we got ours at good will) and buy some ethical rice. Less packaging, fewer chemicals . . . and you’ll shave money off your total over time and save the earth.
It’s easy to be self-righteous and parsimonious when I’m not the one writing the blog. I enjoy the writing (and the eating!) keep up the cheap, lovely work!

I know, Amanda. Oh, I KNOW. But some days, when time is short and Ready Rice is plentiful, it lures me, you see. We do have a rice cooker (though I confess that lately, it has not been used as much as it used to be), but on evenings when 30 to 45 minutes of cook time is simply too much, we turn to Uncle Ben for consolation. ;)
