Tonight may have been my very quickest cooking adventure yet – since I started this blog, anyway. LeeLee had to be at a 7 p.m. meeting. I returned home from work at 6:30. He called me at 6:45 to tell me he was 10 minutes out, and I got to work.
I know I’ve said it before, and I know I’ll say it again: Black beans and rice is one of those meals that you know you can rely on! I threw a can of beans in a pot to simmer, cooked some rice in the microwave, the subbed it out for some Boca chik’n patties. The timer had just gone off when LeeLee arrived home at 6:55, and dinner was served!
He didn’t make the very start of his meeting, but as it was just a block away, he wasn’t too late. And because of my faithful quick-cooking dish – in fact, I think from now on I’m going to call it Old Faithful – neither of us had to eat fast food or spend an additional dime on dinner. You can’t beat that!

GRAND TOTAL: $6.25 … or $2.26 per person.
