I meant to post this last night, but a full belly and a finicky camera battery proved to be my blogging downfall. Though this isn’t quite a recessionista meal, I did want to share it for several reasons, not the least of which is that it was quite tasty. But furthermore, it really was prepared with frugality in mind. I purchased bits and pieces of this meal over three weeks’ worth of grocery trips, so as to absorb the cost over time rather than all at once, and as you might be able to see, none of the ingredients or dishes were particularly expensive in the first place.
But the important thing is, we all seemed to enjoy Easter dinner – both the meal itself and the fellowship – and that’s really what it’s all about, isn’t it?
