Some days, you’re just running behind schedule.
My bike tire had a valve “issue,” which meant I had to repair it, which meant my after-work workout began later than usual. LeeLee was later than usual leaving his office and had to make a couple of stops on the way home. By the time either of us had a moment to think about dinner, neither of us wanted to. But we were hungry anyway.
Enter Hamburger Helper. Or, more specifically, Safeway’s version, dubbed “Cheeseburger Macaroni.”
This dish has graced the pages of this blog before, I recognize. It’s quick and easy to make, gives us some protein and some carbs, and paired with a salad makes a nice complete meal. I know it’s not the healthiest dinner on the block, but once in awhile probably won’t kill us. And what can I say? It’s a guilty pleasure. We both love eating it. And on a night like tonight, it’s a lifesaver indeed!
