Now, this is more like it!
I’ve been on a bread-making kick lately (more to come on that later, with photos!), as well as a beer-making kick (again with the photos). So when I got home fairly early today, I found I had plenty of time to whip up some pizza dough and let it rise for an hour or so before LeeLee’s arrival. By the time a load of dishes had finished their cycle in the dishwasher and LeeLee had called to say he was about 15 minutes out, my dough had risen beautifully and was ready to bake!
Soy pepperoni is, as I’m sure you’ve noticed by now, a favorite pizza topping in our house, AND it was on sale this week at the Safeway, so I had no trouble decorating tonight’s pie with it – and some green bell pepper for good measure (the other half of which went into tonight’s salad). While the pizza baked, I whipped up some salad dressing – just some Vegenaise, olive oil, and white wine vinegar with salt, pepper, and fresh dill from the back yard.
The meal was a great success, and I don’t mind telling you that we polished off the pizza! So much for leftovers – but we couldn’t help ourselves!
