This is a meal that was first introduced to Chez Recessionista a few weeks ago; it went over so well the first time that I thought I’d bring it out for another try! This time, I used more pineapple and no bell pepper, and it was even better than the first time around.
LeeLee proclaimed tonight that he’s a fan of anything that includes soy meatballs, and who can blame him? I much prefer making my own meatballs and sautéing them myself – I think it adds another layer of spice and texture, rather than just reheating frozen meatballs from a package.
Tonight, I had dinner delivered from refrigerator to table within about 20 minutes, with a minimum of fuss – I can’t think of anything better on a busy Wednesday night!
