This meal has been a long time coming, but oh, it was so worth it!
Tonight was LeeLee’s night in the kitchen, and he did what he does best: Cajun cuisine. He sautéed some onion with a bell pepper and four stalks of celery, then added soy chorizo from Trader Joe’s, and topped it off with some rice. The red beans were served on the side, and these two dishes in tandem made a fantastic meal!
We wanted to make this dish sometime last week, but plans conspired against us. No matter – the final result was worth the wait!
