Yet another rainy day here in the Northern Virginia area, and I’m fresh out of rainy-day foods! Gone are the Crock-Pot soups of winter (though keep an eye out for a Crock-Pot non-soup dish tomorrow!), gone are the root vegetable-based side dishes of December. Gone even are the – sob! – ramps, which would’ve made for lovely add-ons to another round of biscuits for a breakfast for dinner.
So, spaghetti with meatballs it was. And you know what? It served as a pretty darn good rainy-day meal in spite of itself!
I whipped up nine meatballs (well, I started with 10, but one rolled out of the frying pan) and browned them for the amount of time it took to set the pasta water boiling and cook the spaghetti. While they cooked, I warmed up the spaghetti sauce and baked the bread. By the time the pasta was ready, dinner was served!
I really wanted to pluck some of our fresh lettuce leaves from the garden for a salad, but (LeeLee is going to become dismayed when he reads this – he loves fresh lettuce!) it was raining so hard that I didn’t feel like braving the soggy back yard. Oh, well – that gives our little plants another day or two to regain their composure before we begin our feast!
