I was intrigued by this pizza recipe the instant I saw it and knew it would be a good diversion from our usual Italian-style pizzas. When I was a teenager, my friend Christy always made a superb barbecue chicken pizza – she was the cook, I was the taste-tester – and I really hadn’t had one since then. Tonight seemed like as good a night as any, so when I got home from work, I pulled the homemade pizza crust out of the refrigerator (I made it yesterday in preparation for today) and got to work.
The preparation was so easy – I almost felt badly calling this a homemade meal, so little preparation work did this require! And after 20 minutes or so from end to end, the final result was ready for the tasting.
It’s a naturally cheeseless recipe, and I didn’t miss the dairy a bit. But I did find that the barbecue sauce made the crust a little chewier than usual – something I’ll have no problem rectifying the next time around. All in all, it was a good pizza – not my best, I’ll admit, but that had nothing to do with the recipe itself. And it’s definitely one I’ll try again!
