Well, now, this topped off our weekend beautifully.
We came across some gorgeous (seriously – it was so beautiful!) focaccia at the farmer’s market yesterday, and upon laying our eyes on it both LeeLee and I knew instantly that it needed to come home with us right away. So, this meal was really built around that bread – the pasta, sauce, and chik’n were really just window-dressing. :)
We gave a new product a try for our chicken substitute – a Tuscan-inspired marinated veggie chik’n by It’s All Good that LeeLee found at Giant while looking for something to make meatballs with. (Clearly, we went in another direction!) Anyway, the chik’n passed our taste tests with flying colors! We’ll definitely be trying it again.
So, in short, everything came together so nicely and was surprisingly refreshing. It was even more refreshing when paired with my newly brewed beer (more to come on that in another post)! We’ll definitely be going back to the bread man on Saturdays for more focaccia, and we’ll be hitting up that chik’n product again too!
