Oh, yes. Now THIS is a dinner salad.
For reasons I can’t quite explain, I’ve sorta moved away from the dinner salad concept over the years. I grew up eating them nearly every summer in nearly every variety – tuna salad with pasta shells, rotisserie-chicken salad on bed of fresh greens, big bowls of fruit salad that were teeming with colors and sweetness. But as time has gone by, I’ve just not given the summer salad the respect it deserves.
Tonight’s spinach salad changed all that.
I dare say that this will soon become one of the mainstays of our summer months. It’s hearty enough to serve as a whole meal, and it includes a variety of nutrients so I know we’re getting a decent health profile with dinner. Oh, and it’s tasty, too. And pretty easy to fix.
And believe you me, tonight was a night that required re-entry onto the health wagon. After the weekend we’ve had, filled with barbecues and rich Indian food (separate occasions, I can assure you :)), we needed to get back onto the nutritional straight-and-narrow. This spinach salad did the trick!
But LeeLee’s homemade salsa for last night’s cookout at a friend’s house was no slouch, either:
