Now THIS meal is a keeper!
I stumbled across this recipe a week or two ago, and lo and behold, just after I found it, here came some Swiss chard in our latest CSA delivery! As it happens, we also had some leftover tequila from a cocktail party a few weeks ago, and so a meal was born.
This meal has several steps, but they’re all so easy to accomplish. From sautéing the onion to throwing the tequila in the pan to letting the chard get good and wilty, it’s an easy meal! And our quesadilla maker really gets the job done in the end – it got the tortillas nice and toasted in perfect fashion!
We served the quesadillas with refried beans, and each had a glass of homebrew beer on the side. It was a great, easy summertime meal, and I know we’ll be making it again! In fact, now that our chard is maturing out in the backyard garden plot, we may be making it sooner rather than later. Stay tuned!
