Tonight, we did our best to beat the rain while cooking some burgers out on the grill and cleaning out the remainder of last week’s CSA delivery – just in time for a new one tomorrow!
I wrapped two batches of asparagus in foil (with butter and seasonings, of course) and put them on the grill to cook while I tended to another batch of crispy kale inside and put the baked beans on to warm up. (I also added a foil packet of squash to the grill – may as well get tomorrow’s lunch cooked along with everything else!) I had two frozen veggie burgers left from the weekend’s festivities, so as we got closer to time I put them on to heat up. At the very last, I draped them with some leftover cheese and, once they were off the grill, topped each with a sliver of leftover veggie bacon from brunch a few days ago – yum!
The best part? We beat the rain! Here’s hoping we can do so again tomorrow, when I have another grill-friendly meal to prepare. Stay tuned!

I’m loving all your meals, so yummy! However, the fake bacon is a horror. I’m glad to know someone is buying it and using it for food, because we think it cooks and tastes like styrofoam!
Also, I wanted to ask about the baked kale. Do you add any spices or just bake it on a sheet? At what temp? With oil? Does the baking mellow out the bitter flavor?

Hey, Marianne! Yes, regarding the “bacon,” I’ve found the edibility depends on the brand. I won’t trash-talk a particular brand here, but I WILL say that our favorite is Morningstar Farms’ bacon strips. I’ve found it’s got good crunch and taste … sans styrofoam. ;)
As far as the kale goes, I used the following recipe from Great Country Farms, our CSA. The best part was, no bitterness afterward — just good green-veggie taste and crunch! Let me know how you like it.
Daria’s Kale Chips
Clean the kale really well.
Pull it off from the stem and then rip into large pieces (they shrink during cooking).
Salad spin the pieces to dry them really well.
Add a very small drizzle of olive oil (remember you can always add more if you need to but you can’t take it back out).
Add salt and seasonings (Mrs. Dash, garlic salt, etc) and toss well.
Spread the kale out on a cookie sheet without overlapping the pieces.
Cook at 350 deg. for 10-15 minutes till crunchy. Watch it closely because burned kale is a very nasty thing. Enjoy.
