Tonight’s meal was supposed to be Guadalajaran quesadillas with beet greens. But I was missing several ingredients – most importantly the tequila that the greens sautee in! – and the car is in the shop, which makes it nearly impossible to pick up additional supplies. (I mean, I could; I cycle quite a lot. But who wants to bike to the liquor store, for crying out loud, after walking half an hour home?)
The Safeway was much closer, and hence, chorizo quesadillas it was. And I’ve gotta say – through improvisation comes excitement! These were great.
In another random turn of events, I deemed our beloved quesadilla maker unfit for labor tonight; even though I cleaned it well and proper after our last fiesta, it was still not tidy enough for my liking and I wasn’t in the mood to give it the deep cleaning it so deserves. (Remember: Car in shop. Repairs equal bills. Bills equal sadness in Chez Recessionista.) So I brought out the frying pan and heated the tortillas that way instead. They turned out great! In fact, I dare say this is a much easier, faster, and definitely tidier way of making quesadillas.
So, in short, a great meal. And not to worry about those beet greens – you’ll see them again tomorrow, cooked into a Cajun classic!
