Some days, you’re just too tired to spend much time in the kitchen. Today, after a lazy afternoon at the ballpark (watching the Washington Nationals beat the Atlanta Braves – a conflicted afternoon indeed for a Southerner like myself), I arrived back home with not one iota of desire to cook a big fancy meal.
Thank goodness for ramen and Rotel! It comes through for me every time.
This really has become one of my favorite go-to meals these days, as I’m sure you can tell if you’ve been around here for very long. I know that if time is tight or the spirit is weak, I can whip this meal up in 10 minutes flat with very little prep work. Tonight I went the extra mile and put together a premade bag of salad. Julia Child might’ve frowned on it in her heyday, but sometimes, one must do what one must do! And I like to think that even my beloved Julia wasn’t above busting out the ramen-in-the-microwave trick every once in awhile, when she got into a pinch. A girl can dream, can’t she?
