If it’s Sunday, it’s Cookout Night at Chez Recessionista. So tonight, we tempted the rain for the second time this weekend and … WON! Well, this time, anyway. And that’s good enough for us.
This is one of the very easiest meals I make on the grill. I wrap each ear of corn into an individual foil packet with some butter, salt, and pepper, and let them cook until the potatoes have boiled through inside (usually about 30 minutes from the time I put the pot on the stove). About 10 minutes out from serving time, I put a couple of Morningstar Farms Grillers over the coals and, about one minute out, I pull the corn off and toss a couple of buns on. A mere 60 seconds later, voila! Dinner is served.
Tonight’s meal also featured one of the last homebrewed Wiezenbiers we’ve got around the house, as well as the debut of the cucumbers I pickled a month ago. Lo and behold, they’re actual PICKLES now! Will wonders never cease?
