The cool yet summery weather beckoned me back outside tonight, and I couldn’t resist lighting up the grill and popping open a beer for a little cookout. On tonight’s menu were some fresh ears of corn, some beets from our CSA, enough veggie dogs to feed an army, and some baked beans simmering inside.
I think I still need to get the hang of beets. I haven’t had much experience with them over the years, and it surely shows whenever they end up in my CSA box or at the farmer’s market! Tonight’s stint of grilled beets turned out OK, but just OK – I followed some suggestions I found online and put them into a foil packet peeled and whole, and they came out pretty tough. I think next time I’ll slice them into rounds and see if that makes them more tender. Does anyone have any suggestions?
At any rate, the meal was a summer delight. It’s so nice to dine outside several times a week – there’s nothing like fresh air!

BUT WAIT! This meal makes enough for several rounds of leftovers. So the per-person price goes down even more!
