Tomato-Basil Quiche.
As I’m writing this, two quiches are baking in the oven, and though I haven’t sampled them yet, if they taste as good as they look we’ll be in good shape!
I got this particular recipe from one of my very favorite blogs, $5 Dinners, and was especially interested to use it because of the multitude of tomatoes and fields of basil we’ve got around the house right now. These quiches definitely made a welcome dent in our supply!
And the preparation was a breeze. No vegetables to sauté. No pans to get dirty. Just two pie pans and the filling! I was shocked at how easy it all was to put together.
Now we’ll just have to see how it tastes …
It was very good! It could’ve used more salt, but that’s my fault – we ran out of salt as I was seasoning the quiches and the end result wasn’t a surprise. But LeeLee didn’t seem to mind – between the two of us, the entire pie pan was cleaned out within minutes!
I’ve got the second quiche cooling in the kitchen now; when it’s ready, I’ll put it in the freezer to bring out later. I can’t think of a more efficient meal!

Tomatoes: Prepaid.
Basil: FREE from the garden.
Eggs: $2.00/six ($1.00/person)
Pie crust: $4.19/two ($2.10/person)
Onion: $1.00 ($0.25/person)
Zucchini: $0.60 ($0.30/person)
GRAND TOTAL: $7.79 … or $3.65 per person.
BUT WAIT! This meal makes two quiches, one of which we’ll freeze for later. So the per-person price goes down even more!
