This is a recipe I’ve had up my sleeve for a week or so, ever since I saw it over at $5 Dinners. We’ll never turn down a good Mexican meal here at Chez Recessionista, and I had a feeling this dish would fit right in.
The short story? It fit in, all right. So much so that I think it’s already destined to become a regular!
Though it takes about a half-hour to bake, the preparation time is less than 10 minutes, and most of that is spent waiting for the beef and bean mixture to warm up and cook through. When I put my pan of chimis in the oven, I put the rice on to cook, and half an hour later everything was done! And to our satisfaction, at that.
We only had room in our baking dish for five of the six chimis, so I baked the last one separately after we were finished with dinner. No matter – the last two are destined to become LeeLee’s lunch tomorrow, anyway, so tardy cooking was not a problem.
Anyway – thanks, $5 Dinners, for another great meal!

Quorn “beef”: $4.99 ($2.50/person)
Black beans: $1.29 ($0.65/person)
Jalapeno: Prepaid.
Tomato sauce: $1.00 ($0.50/person)
Corn: $0.79 ($0.40/person)
Rice: $0.88 ($0.44/person)
GRAND TOTAL: $8.95 … or $4.49 per person.
BUT WAIT! This recipe makes an additional serving for lunch tomorrow. So the per-person price goes down even more!
