So, yesterday’s meal offered a fond farewell to summer. Today’s dinner offers up a hearty welcome to autumn!
I brought out the good old Crock-Pot for a rendition of my mother’s famed vegetable soup, complete with potatoes from our own Great Country Farms. (As an aside, you’ll be seeing quite a few of these potatoes over the next little while … we have about 20 pounds’ worth!)
I’ve gotta say, it was a pleasure going through the day safe in the knowledge that barring a power failure, dinner would be ready when we got home from work tonight. And sure enough, when I came in the door, the smell of simmering soup greeted me like an old friend. I may talk a good game about my love of summer, but oh, how I love autumnal meals just as much! There’s just something so comforting, so homey, about soup, about the Crock-Pot … it’s a great way to begin settling down for the night.
Anyway, the vegetable soup was ALMOST as good as Mom makes – it was certainly greeted with enthusiasm (and second and third helpings) at our table this evening! Look for this recipe to be a mainstay in the cold-weather repertoire – it’s a go-to that’s healthy, easy, and tasty to boot.
