When I picked up the ingredients for this, one of our favorite go-to meals, last night at the grocery store, I really didn’t think I’d be using it so soon! But today was a long, fairly rough day at work, and by the time I got home I knew I didn’t feel like rolling up my sleeves and whipping up a big, complicated dinner. (Instead, after dinner I rolled up my sleeves and got to work on some spaghetti sauce, canning four jars’ worth!)
I was tired. I was hungry. After a 9-mile run this morning, I needed carbs in the worst way. I knew LeeLee would feel the same.
So … here came ramen noodles topped with Rotel (or, in this case, Safeway’s equivalent), served with a Boca chik’n patty and a salad on the side. And it was filling, comforting, and healthy, in spite of the fact that the whole meal took just 10 minutes to make!
Perhaps tomorrow we’ll be back on the culinary-delicacy train. Today, though, we were just as happy to let the noodles do the talking!
