Oh, Crock-Pot, how do I love thee?
Tonight was an autumnal soup night, and it was well past time that I brought out my favorite black-bean soup recipe (from Vegan Planet by Robin Robertson) for the occasion. I knew it would provide just the perfect amount of comfort and heartiness I was looking for on a crisp fall night, when the air smells of acorns and the last honeysuckles of the year.
What I didn’t know is that LeeLee would be detained at a meeting and so we’d be eating in shifts. Hence, the lack of photography – I just completely forgot, as I was out of my routine! (Which goes to show you how routine-filled life can become at times, no?)
Anyway, the soup was as good as always – more on account of the recipe than the cook! And the house smelled so good after the veggies had had a chance to simmer in their broth all day long. What a wonderful welcome home after a long day away!
Expect to see this recipe time and again over the winter months – it’s one of my favorite. In fact, I dare say it may quickly become the winter version of Old Faithful! But I can think of worse fates. :)

BUT WAIT! This recipe makes an additional serving of leftovers for LeeLee tomorrow as well as enough for a freezer container, so we can enjoy some for later. So the per-person price goes down even more!
