I apologize for my lack of posting this week – I was graced with a day off yesterday and, while that was a much-needed break, Monday was spent getting ahead on things so I wouldn’t be hit by a deluge when I returned to work today! So I’ve got a few meals to discuss, but for simplicity’s sake I won’t give the stats of each one. I’ll get back on track tomorrow!
On Sunday, I was in a rush to get to my bowling league, so I whipped up a quick rendition of ramen with Rotel, served alongside a Boca chik’n patty and a bowl of salad. It’s always a winner at Chez Recessionista, and I stand proudly by it as a quick way to pull together dinner when time is short!
Monday evening brought with it an autumnal feel – the air felt cool and crisp as we neared October, and I knew the time was right for a nice warm bowl of potato soup. With that, I whipped up a rendition of my mother’s best recipe, and LeeLee and I reveled in its creaminess and heartiness on a nice fall night – topped off, of course, with Goldfish crackers. Because frankly, potato soup is always best served with Goldfish. Plain and simple.
Last night, after I returned home from a day of lighthouse-looking on the Chesapeake, I wrapped two potatoes in aluminum foil and put them in the oven to bake while I sliced lots of okra for their own turn in the oven. While the veggies cooked, I mixed together some Quorn ground “beef,” mushrooms, and pizza sauce, along with some spices, for an order of sloppy Joes – which turned out quite well, if I do say so myself. There’s just something so comforting about sloppy Joes – we don’t have them nearly enough!
Which brings us to tonight. LeeLee was called away to a meeting at the last minute, so instead of going out for takeout, I pulled an Amy’s pizza out of the freezer and put it in the oven while I tossed a salad and treated myself to a four-course meal. I began with the Caesar salad:

and then cracked open a Dogfish Head Punkin Ale.
Mmmm … heaven!
