The fall weather continues, and we’ve got 40 (!) pounds of potatoes to use up, so tonight’s meal practically made itself!
As we did last year, LeeLee and I went out to Great Country Farms a few weeks ago to pick potatoes, and boy did we come home with a haul. The great thing about those little bundles of starchy goodness is, as long as you treat them properly (putting them into paper bags and storing them in a dark, cool place), they’ll last for months! We’re banking on that, for sure.
So back to tonight’s meal. Today was a rainy day here on the homefront, so I had a taste for soup. I knew I didn’t want to do anything super-complicated, so Mama’s potato soup recipe did the trick! I heated up some garlic bread on the side and tossed a salad to round out the meal, and dinner was ready within half an hour!
I should already warn you that we’ll be making this quite a lot over the cooler months. It satisfies, it’s nourishing, and it’s easy to make and economical, too. All hail the potato!

Soy milk: $1.99 ($0.50/person)
Garlic bread: $3.99 ($1.00/person)
Butter lettuce: $2.50 ($1.25/person)
Tomato: $2.00 ($1.00/person)

GRAND TOTAL: $11.63 … or $4.33 per person.

is there less dairy than i remember? (come on now…it has been awhile)

We’ve not gone vegan, per se … but we’re really trying to stay away from dairy as much as we can — for the health aspects as well as the humane aspects. So you’ll still see cheese and eggs and the like pop up, I’m sure (for instance, this next week I’m planning on a BBQ Cornbread in the Crock-Pot, and the Jiffy mix will have eggs), but likely with not as much regularity as in times past. :)
