As I mentioned in yesterday’s post, the weather is finally starting to feel autumnal here in the Mid-Atlantic region, and as a result my tastes have started to turn to heartier fare than the salads, light soups, and bright-eyed pastas of yesterweek. So when the cool October breeze tickled my bare arms today and chilled me on my bike ride home from work, I knew there was only one thing to do: Break out the casseroles!
This is the first time I’d made the tater tot hotdish (which I found on Cooks.com by mistake a year or so ago) in quite a while, and I made some modifications while I went – I think for the betterment of the dish. For ease, I added minced onion flakes instead of a fresh chopped onion, and spiced the dish up with some garlic powder, salt, and pepper. But the biggest change I made was adding chopped Boca burgers rather than the pre-ground soy burger crumbles, and I think the meal was better for it.
But the best news is, this dish makes enough for at least two hearty additional servings of leftovers. Hello, Thursday and Friday lunch!

Cream of celery soup: $1.69 ($0.85/person)
