Tonight was one of those evenings where my best-laid plans all went awry. You’ve had one or two of those evenings too, right? Where your good intentions all the day long were thwarted by Life at the 11th hour?
You have? Oh, thank goodness. For a minute there I thought I was the only one!
Suffice it to say, by the time I made it to the house tonight, I knew I needed a menu change and I needed it fast. LeeLee was called away to two back-to-back meetings, and I was ravenously hungry with no drive to make a full, stovetop-and-oven meal for just myself. Thank heaven my fallback dinner of nachos came to the rescue!
Mission Tortilla Strips were two-for-one at the Safeway this week, so I had a bag ready and waiting for duty. I arranged some chips on a plate, spooned several dollops of refried beans on top, added some reduced-fat cheese, and topped the whole plate with some sliced black olives. A quick spin in the microwave for a minute or so, then some sprinkles of hot sauce, and dinner was served!
… What can I say? On a night when the fates conspire against us to have a well-planned, well-executed meal, nachos fit into the picture just beautifully. Better, more well-rounded nutrition will come back onto the scene tomorrow, but for tonight, here’s to homemade comfort food. Sometimes, it’s just what the doctor ordered!
