This has been a busy week! Tonight, LeeLee was home on time but I was delayed in order to attend a class at the animal shelter where I volunteer. As always, the Crock-Pot came to my rescue, greeting me with the aroma of a freshly cooked meal as soon as I walked in the door! (LeeLee, bless him, even waited to eat until I got home – an hour later than I’d anticipated!)
Since I knew this meeting was on my docket tonight, I spent a few minutes this morning getting the slow cooker up and running. This recipe couldn’t be easier: Peel and dice three large (or five small) potatoes, dice a small onion, pour in two cans of corn (one kernel, one creamed), add a package of vegetarian sausage (I like Morningstar Farms breakfast links for this recipe!), some basil, salt, and pepper, and then two cups of water. Turn on and let cook until you get home from work and are famished! Then, as you’re getting your bowls and silverware together, add a can of evaporated milk and heat through. Dinner!
I’m not a bit sorry to say that LeeLee and I enjoyed two bowls apiece, and we would’ve had a third if it didn’t make us feel so gluttonous. ;) But no matter – we’ve got leftovers enough for several more lunches, so the meal won’t go to a bit of waste!
And so begins the autumn Crock-Pot season in earnest. Sure, we use it all year long, but there’s just something different about fall meals! And as busy as things are for both LeeLee and me right now, I can guarantee you the good old crockery will be getting the workout of a lifetime over the next little while. I can’t wait!
