So, tonight’s planned meal will have to wait till next week – as happens sometimes, life got in the way. I lingered a bit at the animal shelter tonight (cutting up hot dogs for the resident pups is hard work!), LeeLee had to work (from home, at least) this evening, and we’re still on a bit of a recovery mission/celebratory time after Florida State’s epic win on Monday night. So when I realized I had to go to the grocery store anyway, regardless of whether I’d made tonight’s planned dinner (which was, for the record, halushki) or another, I decided to take the easy way out.
Ramen with Rotel it is!
This quick-fix dinner is a staple on this little blog. It’s cheap, it’s easy, and it’s filling, especially with the vegetables I steamed on the side.
First I got those vegetables cooked – a quick five minutes in the microwave and they were good to go. Next I crumbled up some ramen noodles (without the spice packet) into a large measuring cup, then added a can of Rotel, and then half a can of water. Cooked the whole thing in the microwave for about six minutes and it was ready to come out!
Then it was time for two Morningstar Farms chik’n patties to take their turn. Two and a half minutes was all it took to be cooked through, and then it was just a matter of assembling! The ramen was divided evenly between our plates and topped with the chik’n patties; the veggies were also divided evenly and took their place to the side of the noodles. We were both pretty hungry tonight, so we mowed dinner down in record time!
The only sad part is there are no leftovers, but this is such a quick, inexpensive meal to make that it’s all right. A sandwich will do just fine in my lunch tomorrow instead!
