Friends, I apologize for my absence during most of last week! To be frank, I spent most of the week focused on the Marine Corps Marathon, which I ran (and finished!) yesterday. Don’t get me wrong, we continued to eat, and I continued to cook, but each night when it came time to report back to y’all, I found myself adrift. And tonight, I find myself quite sore – navigating the staircase is a bit of a challenge today! So this will be brief.
But all of that to say, Old Faithful – that is, vegetarian black beans and rice – took good care of us tonight! A rice cooker full of yellow rice, a saucepan teeming with seasoned black beans, and a plate full of fresh vegetable toppings – black olives, avocado, cherry tomatoes, onions from Mr. Lopez’s farm stand – hit the spot indeed. We topped our plates with a sprinkling of Daiya pepperjack and vegan sour cream, and we each ate to our heart’s content!
I can’t think of a better way to recover from a big race than that. You can count on Old Faithful to get the job done!
