I’ve kept this quiche up my sleeve – or, more accuratnely, in my freezer – for a month or so, ever since I last made two quiches for a recent lunchtime FSU football game. LeeLee and I only needed one quiche at the time, of course – and it lasted several days – so as a result, my second one went into the freezer for later!
Later became today once I realized this morning that there was no way I’d be able to get my Crock-Pot meal ready and be at work in time for a 9 a.m. meeting. But I didn’t fret for a moment – I knew I had a quiche waiting and ready to roll tonight!
So when I got home, after welcoming the plumber in (have I told you about our bathtub leak? That just so happens to be leaking into the kitchen below?), I pulled that quiche out of the freezer, uncovered it, and placed it into the oven to bake at 375 for the better part of an hour. In the ensuing time, Tim the Plumber managed to fix the bathtub issue – the faucet had begun to leak behind the wall, you see, leading to the leak, which was really not that bad when you get right down to it – and by the time he’d departed, dinner was nearly ready.
I try to keep a couple of easy salad kits in the fridge at all times for nights such as this! So tonight I pulled out a kale-and-cranberry salad bag, tossed the contents in a large bowl, and then removed the quiche from the oven as well. Then LeeLee and I served up our plates and dug in!
I’m telling you, quiche never bears a scar from its time in the freezer. It’s firm, it’s flavorful, and it’s just like I baked it for the first time then and there! LeeLee and I mowed down about half of it tonight for dinner, and I’m definitely looking forward to making a dent in the leftovers tomorrow for breakfast. There’s no way it’ll make it to lunchtime!
