Ah, yes. Now THIS is what a snow day should be all about!
Some people may lament that said snow day is on a market holiday, which means I don’t have to go to work anyway. But au contraire – in such times as we live in, when teleworking is a perfectly reasonable option and thus a weekday snow day is really a work-from-home day, having an actual holiday in which to watch the white stuff come down is a rare treat indeed! LeeLee had to work, bless him, so the Wonder-Cat and I spent all day bumming around the house, catching up on laundry and books (for me) and napping (for her). Not a bad way to spend a Monday, all told.
And all the while, one of my very favorite recipes, Robin Robertson’s Backyard BBQ Chili, simmered away in the Crock-Pot! Now, y’all know all about this one, chapter and verse, so I won’t recite each and every step again here. But I will gush that this remains a go-to that’s both a crowd-pleaser and a lovely treat for a party of two. Or three, if you count the fact that Lucky managed to sweet-talk us into giving her one Frito and a pinch of cheese.
Yet another thing I love about this dish is just how much it makes in one pot! We’ve got two plastic containers completely filled to the brim with leftovers now – perfect for lunches and maybe the odd night on the run!
Chili, snow, a holiday … what could be better than this? Our week’s gotten off on the right foot already!
