“Ha-HA!” I shouted as the clouds opened up with a spring shower as soon as I lit the grill tonight. “We are GRILLING!”
I said this to nobody in particular, since LeeLee hadn’t even returned home from the gym yet. But it had taken me a good 10 minutes to get the coals to light (pre-rain) and I wasn’t about to be intimidated by a little shower. So there I was, standing before an open flame, laughing at the sky. Sounds about right for a Sunday evening!
Before too long, the coals were heated up and I’d plunked a pan of baked beans atop the grate, followed 10 minutes later by our first fresh green beans of the season, brought home after buying them from Lopez Farms at the Saturday market. I dressed the green beans up with some garlicky hot sauce from She Peppers, as well as salt, pepper, and onion powder, and a dollop of Earth Balance. Then I put foil over them and sent them on their way.
When we had about 10 minutes left till dinner, I popped five jumbo veggie dogs onto the grill as well and turned them every 2 minutes until they were golden on all sides. Then I removed the dogs, toasted two buns in their place, took everything else off the grill, removed the buns, and declared dinner ready!
We ate indoors tonight since Canada gave us the gift of 60-degree weather today (and quite a lot of wind!). But the cookout feel lasted throughout the meal as we loaded our plates high with a duo of beans plus a veggie dog (or two, in my case – I ain’t proud!).
