Spring is HERE, y’all!
We started the day in long sleeves and sweaters at church, but by afternoon I was in shorts and a T-shirt (well, to be frank, I was in two versions of each, having smeared bike-chain grease all over my first outfit of the afternoon), puttering around the house. The bike ride that followed was warm, sunny, and beautiful, and the cookout following THAT was Big Fun, indeed.
Tonight was a menu of standard favorites, but that doesn’t make them any less tasty! A pan of lima beans and a passel of veggie burgers (one of which slipped through the grill grates and onto the coals, but let’s not quibble) filled up the outdoor space quite nicely, while a batch of vegan “Mac and Chreese” from Road’s End Organics cooked away on the stove indoors.
After a half-hour of cooking time, dinner was ready, and LeeLee and I piled our plates high with goodies. We weren’t disappointed with the results! The components of tonight’s meal sang in perfect concert with one another and before we knew it, there were no more lima beans or mac and cheese to be had. And we’ve only got one more veggie burger after my little spatula incident earlier, but that’s OK. Ahem.
Let’s hear it for spring – and for cooking out!
