As you’ll see in a video I posted just last night, we are now in the throes of Potato Season! This is a magical time of year for a spud-lover like me, and the opportunities are downright endless. But at the end of the day, when it comes to potato recipes, my heart always goes back to my first true love: Mashed potatoes. There’s just nothing better.
Now, longtime followers of this blog (or my Instagram feed!) will also be well aware of my love for all things Instant Pot, the do-it-all pressure cooker that has over the past two years become another member of my family. So pairing mashed potatoes with the Instant Pot was a no-brainer for me. And I was pleased to learn that it was an amazingly easy task that takes very little time, too!
This time around, we enjoyed some mashed potatoes as a crucial component of vegan bangers and mash. These potatoes were hand-dug by LeeLee and me at Great Country Farms last weekend, a mere portion of the 35 pounds of bounty we brought home for safekeeping. This amount of potatoes will last us through Christmas if we play our cards right – what a happy thought!
The full recipe is below. Pair your potatoes with sausage and peas like we did, or a cookout, or a holiday feast, or the protein and veggies of your choice – you can’t go wrong!
INSTANT POT MASHED POTATOES
Serves 4
What you’ll need:
6 medium-sized potatoes
3 cups vegetable broth, or enough to cover
½ cup unsweetened nondairy milk
2 tbsps. nondairy butter
½ tsp. garlic powder
Salt and pepper to taste
Fresh parsley, optional
Slice your potatoes (skins on is just fine!) into rounds and place them in the bottom of the pressure cooker. Then pour enough vegetable broth over to cover most of them (if a few potato rounds float up to the top, that’s just fine).
Close and seal the pressure cooker and cook on High for 8 minutes. Quick release when they’re done and drain most of the broth off, reserving a little bit depending on how thick you like your potatoes.
Mash the potatoes with a potato masher (a large spoon or ladle will do too) and then add the milk, butter and spices. Stir thoroughly, add some fresh parsley if you’ve got it, and serve!
