I’ve already whipped up one version of a Hoppin’ John recipe suitable for the pressure cooker, and I stand by it wholeheartedly. But sometimes, you’re in a huge hurry and need a meal that’s even easier to make, and in less time too. That’s where this Easy Instant Pot Vegan Hoppin’ John recipe comes in. It’s sure to save the day!
The secret? Canned black-eyed peas. Now, I’m sure this is heresy to some, but let me tell you what – when your day has gotten wild and you realize that dinner is going to be super-late unless you take drastic action, seeing a can of black-eyed peas in the back of the cabinet is a heart-warmer for sure. Also, you’ll find this Hoppin’ John recipe is a bit of a pared-down model; gone is the sausage and chopped onion. But the dish isn’t hurt by these omissions!
Another diversion from the norm for this recipe? The use of Swiss chard instead of collard greens. There are two simple reasons for this. First, Swiss chard was what I had on hand. Second – and this is a confession – I don’t really like Swiss chard. So I figured that since I had it on hand from our CSA, AND I don’t really like it, perhaps I could secret it away amid the rice and peas. And guess what? It WORKED! Oh, happy day!

Ingredients
1 cup white rice
1.5 cups vegetable broth
1 can black-eyed peas
1 bunch Swiss chard, de-stemmed and cut into small strips
1 can diced tomatoes with green chilies (aka Rotel)
Cajun seasoning, to taste
Garlic powder, to taste
Onion powder, to taste
Salt and pepper, to taste
2 chik’n patties
Instructions
Place all of the ingredients together (except for the chik’n patties) in the Instant Pot and stir thoroughly.
Put the lid on, seal the pressure cooker, and use the Rice button to automatically set the time.
Cook the chik’n patties according to package directions.
Quick-release when the time has elapsed and give the Hoppin’ John a final stir.
Top with a chik’n patty and enjoy!
