Sometimes, you’re in a hurry and need a meal that’s incredibly easy to make, and in less time too. That’s where this Easy Instant Pot Vegan Hoppin’ John recipe comes in.
1 cup white rice
1.5 cups vegetable broth
1 can black-eyed peas
1 bunch Swiss chard, de-stemmed and cut into small strips
1 can diced tomatoes with green chilies (aka Rotel)
Cajun seasoning, to taste
Garlic powder, to taste
Onion powder, to taste
Salt and pepper, to taste
2 chik’n patties
Place all of the ingredients together (except for the chik’n patties) in the Instant Pot and stir thoroughly.
Put the lid on, seal the pressure cooker, and use the Rice button to automatically set the time.
Cook the chik’n patties according to package directions.
Quick-release when the time has elapsed and give the Hoppin’ John a final stir.
Top with a chik’n patty and enjoy!
