Friends, this week’s Taco Tuesday took a turn we will never forget.
Admittedly, sometimes Taco Night can get a little dull. The same old toppings served the same old way, while still tasty, just don’t have the zing they once did. But this week, we ventured out to parts heretofore unknown, and our lives were altered for the better.
This week, I perfected the art of the vegan Big Mac taco. You heard me: A vegan Big Mac taco. Maybe we can shorten that to a vegan Big Maco. Doesn’t quite roll of the tongue, but I think it can work!
Just like the Big Mac burger from You Know Who, this is a decadent, hearty dinner – in a taco shell. And all the components (except the bun, of course) are there. The two all-“beef” patties. The special sauce. The lettuce. The cheese. The pickles. The onions. And, of course, the sesame seeds. I even threw in tomatoes, because what is a taco without tomatoes?
Once you break up and brown the burgers, these tacos really come together in no time at all, and they’re super easy to put together. Now, depending on the size of your taco shell, they might be rather overstuffed in the end, but to my mind there’s no such thing as a too-full taco, not really.
The compilation of ingredients into a shell is really something to behold. Knowing how good each facet is on its own, I figured altogether it would be a fine taco, but this, friends, is something else. This is perhaps the best taco I’ve ever made – or eaten. In a concert of flavors, these Big Macos sing an aria. You’ve got to make them at once.

Ingredients
1 cup mayonnaise
1/3 cup ketchup
1 tbsp. onion powder
2 tbsp. sweet pickle relish
Salt, to taste
2 burger patties of your choice (we used Beyond)
4 crispy taco shells (we used blue corn)
4 slices plant-based cheddar cheese
1 cup shredded lettuce, or to taste
1 tomato, diced
1 onion, diced finely
8 pickle chips
2 tsp. sesame seeds
Instructions
First, make your Thousand Island “special sauce” by mixing the mayonnaise, ketchup, onion powder, pickle relish and salt. Set aside for serving later.
Next, heat up the burger patties in a pan and then crumble them up with your spatula. Keep cooking at medium-high heat (you might want to turn it down to medium-low once things really get rolling) until the burgers, now essentially ground “beef,” are cooked through.
As the patties cook, heat the taco shells in the oven according to package directions. Ours usually take about 7 minutes at 350 degrees.
Once the burgers are broken up and cooked thoroughly and the taco shells are piping hot, it’s time to assemble the Big Mac Tacos! First, line the taco shell with a slice of cheese. (It may break in half. No biggie.) Next, spoon a generous helping of burger crumbles. Next, add diced onion and tomato. Top that with shredded lettuce, and then some pickle chips. Finally, spoon a heaping portion of Thousand Island on top and then dust the whole thing with some sesame seeds.
Serve with your favorite side item (we’re partial to rice, but fries would be a suitable choice given the burger nature of the meal!). And enjoy!
