Vegan pork adds pizzazz in this fun taco recipe!
1 package vegan BBQ pork (we used Barvecue)
1 package crispy taco shells
1 can vegetarian refried beans
1 package shredded lettuce (or, to really play up the BBQ theme, cole slaw cabbage)
1 tomato, diced
All your favorite toppings (cheese, sour cream, salsa, avocado – the works!)
Cook your BBQ shreds per package instructions. We let ours get nice and charred on the bottom before flipping things around.
While that cooks, warm up your refried beans on the stovetop (or microwave – we won’t judge).
Bake your taco shells per package instructions (if you leave them in a bit too long, so much the better!)
Once everything is cooked, spoon a layer of refried beans into your taco shell and top with the BBQ shreds, then pile your toppings nice and high. I always love it when the avocados, et. al., fall out – it means your tacos are stuffed to the gills!
Serve with rice, a salad, or whatever feels right.
