Tonight’s meal was lovingly prepared for some very special guests – my family is in town! So I apologize in advance for both the brevity of this post and the potential radio silence over the next few days as we catch up and enjoy an early Christmas visit.
That said, what better way to welcome loved ones up north (or, at least, more north than their home) than with a piping-hot Crock-Pot full of Robin Robertson’s vegan Cuban Black Bean Soup, straight from her wonderful Vegan Planet? The house smelled heavenly after the soup had been cooking for eight or nine hours, and thankfully for us all, the taste was also up to par. Everyone went back for seconds, even my wonderful mother, who usually dutifully holds herself to one serving! That, to me, was a true compliment indeed.
At any rate, we all chowed down with gusto and loved both the heartiness and lightness of the soup. We all left the table full, but not heavy – a wonderful combination if I do say so! And there’s just enough left over to last one of us for one more meal – maybe LeeLee’s for lunch tomorrow? Time will tell!
