Tonight, dinner had to come together ASAP – LeeLee had a meeting at 7 and I had lots to do too. So I took a few kitchen shortcuts, which I feel is A-OK, especially if it keeps us from getting takeout from someplace!
And so, instead of firing up the rice cooker, I put a packet of Uncle Ben’s Ready Rice in the microwave, followed closely by a bowl of red kidney beans, and finished off with two links of Lightlife vegetarian chorizo. Within five minutes, dinner was ready, and the results were no worse for wear after having been microwaved rather than stovetop-cooked!
As Southerners who grew up not six hours from the Big Easy, we adore red beans and rice – always have. When I have more time, I prepare everything low and slow, simmering the beans in Cajun seasoning as the rice cooker works its magic. But for tonight, this fast-paced version fit the bill perfectly! (And we’ve still got two chorizo links left for tomorrow!)
