Sometimes, when lunchtime rolls around, a sandwich simply won’t do. You need something hot and filling, something that’ll stick to your ribs till dinnertime.
In these cases, I tend to turn to one of my favorites – veggie dogs and baked beans! It’s not just for backyard barbecues anymore. Sometimes, it’s for the microwave and a quick, hearty lunch.
This meal couldn’t be simpler to make; simply dress up your hot-dog bun however you want, toss on a veggie dog, add some cheese or other fixins if you’re in the mood (I like to add the cheese before heating and some diced onions after the fact) , and then spoon some baked beans next door on your plate. Then, to the microwave we go! I often heat everything for 30 seconds, test it, and heat it again for however much time it needs. It doesn’t take long!
Now, LeeLee prefers to heat just the veggie dog and beans first, and then add the bun. But I find that too cumbersome. ;) These are the personality traits that marriages are built on, I tell you!
Additionally, sometimes if I’m feeling fancy I’ll heat the baked beans on the stovetop and add them after the veggie dog is finished cooking. But if this is a lunch for one – or sometimes for LeeLee and me both – I don’t bother. Whatever blows your skirt up, as my mother would say!
