It’s been awhile since we’ve enjoyed black beans and rice – also known on this blog as Old Faithful! But I was missing one day’s worth of dinner plans on this week’s menu, since our Sunday-night cookout was cancelled due to rain. We always keep the fixins for black beans and rice on hand, just in case, and today it came in quite handy!
I poured the rice in the rice cooker, added a packet of Goya seasoning, and then floated it in two cups of water. While the rice steamed, I heated up some black beans with adobo seasoning in a saucepan and prepared my add-ins – diced onion, diced tomato, black olives, Daiya pepperjack vegan cheese, and Slap Ya Mama hot sauce. As the rice finished up, I heated two Boca chik’n patties in the microwave for a little extra protein, and right after the microwave beeped, the rice cooker clicked off. A timing success!
And the meal itself was a success, too. LeeLee and I both adore black beans and rice, and we plowed through our plates with vim and vigor. I’m always amazed that something so easy to make can be so filling and satisfying! But that’s the beauty of Old Faithful, I suppose. You know you can rely on it.
