All right, friends. Christmas is (sadly) in the rearview; the new year approaches in short order! I can’t quite say we’re fully back into workaday mode, situated as we are between two holidays at the moment, but I did want to pop in and say hello now that the Christmas week has calmed back down a bit.
Tonight I whipped up a favorite – skillet lasagna from Christy Jordan over at Southern Plate! Her recipes are so easy to vegetarianize without losing any of the flavor or oomph, and this one is no different. You can click the link to her site to check out the step-by-step instructions, but the long and the short of it is that it took us no more than 20 minutes from end to end to get this meal on the table – and that includes the 7 minutes when LeeLee had to jet to the neighborhood grocery store to pick up the ground “beef” crumbles I’d forgotten earlier!
That Safeway, man. It’s so close that we tend to get a bit lazy with the shopping list sometimes, but on nights like tonight it’s a Godsend! LeeLee was back in no time at all.
We were both hungry tonight, so we dug in with gusto and each enjoyed two solid helpings. LeeLee even went back for a third, and I must admit I did as well when he thought I was putting the leftovers away! And speaking of leftovers, I’m pleased to say that we’ve got plenty of pasta left for lunch tomorrow – and probably Wednesday, too!
