Last night, the last official night of summer, you knew we had to take to the patio for one final cookout of Summer 2009. There simply was no other option. No surprise there.
While our potatoes baked in the oven indoors, fresh from the fields of Great Country Farms, I sliced a zucchini and a yellow squash, skewered them with whole white mushrooms, and put the skewers on the grill to cook awhile. As they heated up, I prepared the chik’n, taking Quorn’s “naked cutlets” and slathering them up good with barbecue sauce before throwing them into the grill as well, ensuring they had nice even grill marks as time went by.
By the time they were finished, the potatoes were also ready to go, and dinner was served! It was a great final meal of a great summer … if I do say so myself! :)

BUT WAIT! This recipe makes two additional servings of chik’n for lunches this week. So the per-person price goes down even more!
