On the last night before I went to the grocery store (post-vacation, remember), I dug deep in the cupboards and came up with another household favorite – one that, I’m a little sorry to say, we’ve been turning to a bit too frequently as of late! But on a night when there’s nary a drop of food in the house, some ramen, a can of Rotel, and a Boca chik’n patty prove to be a delicacy indeed.
As always, I feel as though it’s redeemed a bit by the side salad. And frankly, I don’t feel like ramen (sans flavor packet, remember) paired with tomatoes and green chiles is THAT bad of a meal, especially when topped with some chik’n! But we’ve relied on it a bit too much lately, and that has to stop. So I’ll take it out of the rotation for a couple of weeks and see what we can come up with in the meantime. I bet I can think of SOMETHING. :)
In the meantime, though, I did love our swan song!
