OK, OK. So I know “cabbage” and “quesadillas” don’t usually go together. I never would have thought of it myself, either … until I got home and realized that my Swiss chard was past the point of no return and simply couldn’t be used in good conscience.
And that’s when my eyes turned to today’s delivery from our CSA, Great Country Farms. And THAT is when I saw a perfect head of cabbage, sitting on the table, just waiting to go into the refrigerator.
Poor old cabbage – it never made it that far!
Necessity is the mother of all invention, and in this case the invention paid off. I substituted the cabbage for the Swiss chard in this Vegetarian Times recipe for Guadalajaran quesadillas, and the end result was great! In fact, it was so great that I’ll be using it again, especially when I’ve got more cabbage than I know what to do with. Forget substitutions – this quesadilla stands on its own!

Cheese: $2.99 ($1.50/person)

BUT WAIT! This recipe makes an additional quesadilla for lunch tomorrow. So the per-person price goes down even more!
