First of all, I apologize for my absence over these last few days. We had a weekend full of entertaining dinner guests, spending time with old friends, and racing in four-mile runs, and I confess I’m running a bit behind as a result! But I’m back on track now … mostly.
I say “mostly” because I’m afraid that in the hubbub I’ve lost something very important to the state of this blog – my weekly grocery receipt! So this week will be a little bit different here at Chez Recessionista. Instead of meal breakdowns at the end of every post, I’ll be omitting them in the hopes that you’ll understand and forgive this momentary lapse. :)
So. Let’s get down to it.
Tonight I gave a new recipe a try — coconut curry with tempeh! I’d never made a curry before, and I was pretty intimidated at the prospect, but in the end I didn’t have any problems at all. In fact, I found this to be one of the easiest meals I’ve cooked in quite awhile (save for Old Faithful, of course), and it certainly looks like it takes much longer than 15 minutes on the stovetop. :)
We gave Tofurky’s Coconut Curry Tempeh a try tonight for the first time, and it was a delight! It fit in beautifully with the flavor of the rest of the dish, mingling its marinade in with the coconut milk perfectly. The Roma tomatoes were great, the spring onions fresh from our CSA were pungently tasty, and the basil from the garden was the perfect finishing touch. We’ll definitely be making this one again!
No stats today, because of that unfortunate receipt-losing experience. If I find it (and I haven’t given up hope yet!), I’ll be sure to update this post with the results!
