On this rainy Sunday evening, before I headed out for bowling league and after LeeLee returned from the gym, we needed a little something to eat for an early dinner. Ramen with Rotel fit the bill, as it always does!
I love the spice of the green chiles in this dish, which goes great with a Boca chik’n patty. It’s filling, and easy to make, and pretty healthy; a winner at Chez Recessionista!
(And while I have you on the line, I must sing the praises of ramps once more. For those wild leeks graced our table twice for brunch this weekend, though I fear this may be the last week of their availability; there were slim pickin’s at the farmer’s market this weekend!)
Anyway. The stats:
Ramen: $0.29 ($0.15/person)
Rotel: $1.69 ($0.85/person)
Boca chik’n patties: $3.50/four ($0.88/person)
GRAND TOTAL: $5.48 … or $1.88 per person.

Ramps…?
(Sorry, I came across your recipe when looking for vegan ramen recipes. I don’t know if this is 100% vegan, but it looks good!)
